A delicious and rich soup made with fresh mushrooms and cream. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g mushrooms
- 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl cream
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Clean the mushrooms and slice them.
3. Heat the butter in a pot and sauté the onion and garlic until soft.
4. Add the sliced mushrooms and cook until they are golden brown.
5. Pour in the vegetable broth and let the soup simmer for about 10 minutes.
6. Use an immersion blender to puree the soup until smooth.
7. Stir in the cream and mix well. Heat the soup, but do not boil.
8. Season with salt and pepper to taste.
9. Serve the soup garnished with fresh parsley.
