Creamy Chanterelle Soup

A delicious and fragrant soup made with fresh chanterelles.

Ingredients
- 0.5 l chanterelles - 0.5 dl chanterelle-rice broth (about 4 servings)
- 1 tbsp dry sherry
- Water
- 1 tbsp butter
- 1 tbsp dried parsley
Instructions
1. Sauté the chanterelles in butter in a pan until they turn a beautiful golden brown. 2. In a pot, bring water to a boil and add the chanterelle-rice broth. Stir well.
3. Add the sautéed chanterelles to the broth and bring to a boil again.
4. Season the soup with sherry and sprinkle dried parsley on top before serving.
