This delicious chickpea sandwich spread is packed with flavor and nutrients, perfect for a quick lunch or snack.
Ingredients:
- 1 can chickpeas (about 2 dl)
- 1 small red onion (or green onion with tops)
- 1 celery stalk
- 2 tablespoons fresh dill, chopped
- 1 tablespoon capers, chopped
- 1/4 sheet nori seaweed
- About 1/2 dl vegan mayonnaise
- Juice of 1/2 lemon (about 2 tablespoons)
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Additionally:
- 2 slices of bread per serving
- Vegan butter or margarine
- Sliced radishes and/or cucumber
- Arugula
Instructions:
1. Drain the chickpeas and transfer them to a bowl. Mash them coarsely with a fork.
2. Peel and finely chop the red onion and celery. Add them to the chickpeas.
3. Stir in the dill, capers, seaweed, vegan mayonnaise, lemon juice, Dijon mustard, garlic powder, salt, and black pepper. Mix well.
4. Taste the spread and adjust the seasoning to your liking.
5. Spread vegan butter or margarine on the slices of bread.
6. Top the bread with the chickpea mixture and garnish with sliced radishes and/or cucumber and arugula.
7. Enjoy immediately or pack it for lunch!
