Ingredients:
- 400 g spaghetti
- 150 g bacon or guanciale (diced)
- 3 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt
- Black pepper
- Fresh basil (for garnish, optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Meanwhile, cook the bacon or guanciale in a skillet over medium heat until crispy. Add the minced garlic and sauté for an additional minute.
3. In a bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper.
4. Drain the cooked pasta, reserving a little cooking water.
5. Add the hot pasta to the skillet with the bacon and mix well.
6. Remove the skillet from heat and pour the egg mixture over the pasta. Stir quickly to ensure the eggs cook with the residual heat, avoiding scrambling.
7. If needed, add a bit of reserved cooking water to achieve your desired consistency.
8. Serve immediately, garnished with fresh basil if desired.
