Description: Kibe is a delicious Brazilian dish made from bulgur wheat, ground beef, and fresh mint. These oval-shaped meatballs are deep-fried to a golden brown and served with a yogurt dip.
Preparation Time: 2 hours (including soaking time)
Serving Size: 24-30 meatballs

Ingredients:

- 250 g bulgur wheat
- 500 g ground beef
- 1 medium yellow onion
- 2 tsp salt
- Cracked black pepper to taste
- 1 bunch fresh mint
- 300 g plain yogurt
- Canola oil for frying
- Lime wedges for serving

Instructions:

1. Place the bulgur wheat in a large bowl and cover with water. Let it soak for a few hours.
2. Drain the bulgur in a sieve and transfer it to a kitchen towel. Gather the towel around the bulgur and squeeze out any excess water.
3. Return the bulgur to the bowl and add the ground beef, finely chopped onion, salt, black pepper, and half of the mint leaves. Mix well.
4. Pass the mixture through a meat grinder or process it in a food processor until it reaches a fine consistency.
5. Adjust seasoning as needed, adding more salt or pepper. Finely chop the remaining mint leaves and mix them into the yogurt. Refrigerate the yogurt to let the flavors meld.
6. Shape the mixture into oval, football-shaped meatballs.
7. Heat the canola oil to 180°C (350°F) and deep-fry the meatballs until golden brown. Use a thermometer for accuracy.
8. Serve the kibe with the yogurt dip and lime wedges.
