Brazilian Black Bean Stew

A delicious and hearty black bean stew that combines the nutrients of beans with a smoky flavor. This dish is easy to prepare even without bacon, making it perfect for a vegetarian diet. Preparation Time: 1 hour 30 minutes (includes 10 hours soaking)

Ingredients:
- 1 cup black beans (soaked in water for at least 10 hours)
- 1 onion
- 70 g bacon or 1-2 tsp smoked paprika
- 3 cloves garlic
- 2 small carrots
- 2 small bay leaves
- 6 cups water
- 1 vegetable broth cube
- A pinch of cayenne pepper
- Chopped fresh parsley for garnish
Instructions:
1. Soak the black beans in plenty of water for about 10 hours.
2. Finely chop the onion and garlic. Dice the bacon and slice the carrots.
3. In a pot, heat a little oil and sauté the onion and bacon for a few minutes.
4. Add the garlic, carrots, and bay leaves. Sauté for another minute.
5. Drain the soaked beans and add them to the pot. Pour in the water, add the vegetable broth cube, and sprinkle in the cayenne pepper.
6. Let the stew simmer for at least an hour.
7. Once the beans are cooked, take out a couple of ladles of the beans and blend them until smooth. Return the blended mixture to the pot to thicken the stew.
8. Just before serving, sprinkle chopped parsley on top for garnish.
