A refreshing salad reminiscent of sunny Copenhagen, perfect for a light lunch or as a side dish.

Ingredients:

- 150 g fresh spinach
- 100 g cherry tomatoes
- 1 avocado
- 50 g feta cheese
- 1 dl roasted nuts (e.g., walnuts or almonds)
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste

Instructions:

1. Rinse the spinach thoroughly and drain it.
2. Halve the cherry tomatoes and dice the avocado.
3. Crumble the feta cheese into small pieces.
4. Combine all the ingredients in a large bowl.
5. Prepare the dressing by mixing the olive oil and balsamic vinegar. Season with salt and pepper.
6. Pour the dressing over the salad and toss well before serving.
