Ingredients:
- 200 ml rice
- 400 ml vegetable broth
- 1 red onion
- 2 garlic cloves
- 200 g fresh mushrooms
- 100 ml cream
- 100 ml grated Parmesan cheese
- Fresh parsley (chopped)
- Salt and pepper to taste
- Olive oil for frying
Instructions:
1. Heat olive oil in a pan over medium heat. Add the chopped red onion and garlic, sautéing until soft.
2. Add sliced mushrooms to the pan and cook until golden brown.
3. Stir in the rice and sauté for about 2 minutes, mixing well.
4. Pour the vegetable broth into the rice mixture and bring to a boil. Reduce heat, cover, and let simmer for about 15-20 minutes until the rice is cooked.
5. Mix in the cream and grated Parmesan cheese. Season with salt and pepper to taste.
6. Serve topped with fresh parsley.
