This delicious and spicy curry will transport you to the sunny beaches of Bali. Easy to prepare and full of flavor, it's the perfect comfort food for rainy days. Preparation Time: 45 minutes

Ingredients:
- 500 g chicken fillet - 2 tbsp coconut oil
- 1 large onion, chopped
- 3 garlic cloves, crushed
- 1 tbsp fresh ginger, grated
- 2 chili peppers, finely chopped (milder chilies to taste)
- 1 tbsp curry powder
- 1 tsp turmeric
- 400 ml coconut milk
- 200 g vegetables (e.g., bell pepper, carrot, zucchini)
- 1 tbsp fish sauce
- 1 tbsp lime juice
- Fresh coriander for garnish
Instructions:
1. Heat coconut oil in a large skillet over medium heat. Add chopped onion and sauté until soft.2. Add crushed garlic, grated ginger, and chopped chilies. Cook for a few more minutes.
3. Stir in curry powder and turmeric, mixing well, and cook for about a minute.
4. Add chicken fillets and brown on all sides.
5. Pour coconut milk into the skillet and stir. Let simmer on low heat for about 15-20 minutes, until the chicken is cooked through.
6. Add the vegetables and cook for another 5-10 minutes, until they are soft but still crisp.
7. Season with fish sauce and lime juice. Mix well.
8. Serve the curry garnished with fresh coriander alongside rice or noodles.
