A quick and delicious vegetable dish perfect for summer moments at the cottage. This recipe is easy to prepare and will please the whole family.

Serving Size: 4 servings
Ingredients:
- 300 g pasta
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 100 g cherry tomatoes, halved
- Salt to taste
- Black pepper to taste
- Fresh basil for garnish
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain, reserving a bit of the cooking water.
2. Heat olive oil in a pan over medium heat. Add garlic and sauté for a moment.
3. Add zucchini and bell pepper to the pan, cooking for about 5 minutes until vegetables are tender.
4. Stir in cherry tomatoes and mix well. Cook for a few more minutes.
5. Combine the cooked pasta with the vegetables. Add reserved cooking water as needed to prevent the pasta from drying out.
6. Season with salt and black pepper. Serve with fresh basil and grated Parmesan cheese.
