Ingredients:
- For the crust:
- 100 g margarine (dairy-free)
- 2.5 dl all-purpose flour
- 1 tsp baking powder
- 0.5 tsp sour cream (dairy-free)
- For the filling:
- 2 dl mixed vegetables (e.g., zucchini, bell pepper, carrot)
- 1 dl grated cheese
- 2 eggs
- 1 dl milk
- Salt and pepper to taste
Instructions:
1. Melt the margarine and let it cool.
2. In a bowl, mix the flour and baking powder together.
3. Add the melted margarine and sour cream to the flour mixture and stir until a smooth dough forms.
4. Press the dough into the bottom and up the sides of a pie dish.
5. Pre-bake the crust in a preheated oven at 180°C (350°F) for about 10 minutes.
6. Prepare the filling: chop the vegetables and mix them in a bowl with the cheese, eggs, milk, salt, and pepper.
7. Pour the filling over the pre-baked crust.
8. Bake the pie in the oven at 180°C (350°F) for about 30-35 minutes, until the filling is set and the top is golden brown.
9. Allow to cool slightly before serving. Enjoy!
