Ingredients:
- 250 g pasta
- 2 large kale leaves
- 1 tablespoon oil
- A pinch of salt
- 100 ml tahini
- 2 tablespoons lemon juice
- 1 clove garlic, crushed
- 1 tablespoon honey (or maple syrup for a vegan version)
- Black pepper to taste
- 50 ml water (you may need more)
Instructions:
1. Cook the pasta according to package instructions until al dente. Drain and rinse with cold water.
2. Chop the kale leaves into small pieces and massage them with oil and salt until they soften.
3. Prepare the tahini dressing by mixing tahini, lemon juice, crushed garlic, honey, and black pepper in a bowl. Gradually add water until you reach your desired consistency.
4. In a large bowl, combine the cooked pasta, kale, and tahini dressing. Mix well to evenly coat all ingredients.
5. Let the salad sit in the refrigerator for about 30 minutes before serving to deepen the flavors.
6. Serve and enjoy!
