Lemon Tahini Pasta

A creamy and zesty pasta dish infused with tahini, lemon, and fresh herbs. Perfect for a light meal! Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 250 g pasta (e.g., spaghetti or fusilli)
- 3 tbsp tahini
- Juice and zest of 1 lemon
- 2 garlic cloves, minced
- 100 ml vegetable broth or water
- 60 ml olive oil
- 50 g fresh herbs (e.g., parsley, basil, or thyme)
- Salt and pepper to taste
- Herb stems (e.g., parsley or basil stems)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain, reserving a little cooking water.
2. Meanwhile, heat olive oil in a pan over medium heat. Add minced garlic and sauté for about 1 minute until slightly softened.
3. Add tahini, lemon juice and zest, and vegetable broth or water to the pan. Mix well and heat until the sauce is smooth and creamy. If needed, add a bit of reserved cooking water for desired consistency.
4. Add the cooked pasta to the pan and toss well to coat it in the sauce.
5. Stir in chopped fresh herbs and herb stems, mixing again. Season with salt and pepper to taste.
6. Serve immediately, garnished with additional fresh herbs if desired.
