A super easy and quick pasta dish that combines the delicious flavor of tahini with the sweetness of peas. Perfect for a weeknight meal ready in under 15 minutes!

Serving Size: 2 servings

Ingredients:

- 200 g frozen peas, thawed
- 150 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp tahini
- 1 garlic clove, minced
- 1 tbsp lemon juice
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh mint or parsley for garnish (optional)

Instructions:

1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve some pasta water.
2. Meanwhile, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1 minute, until golden.
3. Add the thawed peas to the skillet and cook for 2-3 minutes until warmed through.
4. Stir in tahini, lemon juice, and a bit of reserved pasta water with the peas. Season with salt and pepper to taste.
5. Combine the cooked pasta with the pea-tahini mixture and mix well. Add more pasta water if needed to achieve your desired consistency.
6. Serve immediately, garnished with fresh mint or parsley if desired.
