Ingredients:
- 1 tablespoon oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 3 potatoes, diced
- 4 cups vegetable broth
- 2 cups cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Heat the oil in a pot over medium heat. Add the chopped onion and sauté until soft.
2. Add the crushed garlic and sauté for another minute.
3. Add the diced potatoes and vegetable broth. Cook for about 15 minutes, until the potatoes are tender.
4. Blend the soup with an immersion blender or in a regular blender until completely smooth.
5. Stir in the cream and heat the soup again, but do not bring it to a boil.
6. Season with salt and pepper. Serve warm, garnished with fresh parsley.
