Ingredients:
- 3 tbsp butter
- 3 large onions
- 1 clove garlic
- Black pepper
- 2 tbsp liquid honey
- 7 large carrots
- Splash of soy sauce
- Rosemary
- Splash of game stock
- 600 g venison stew meat
- Sea salt
- 150 g bacon
- Splash of balsamic vinegar
- 200 ml cream
Instructions:
1. Take the venison meat out of the fridge and let it come to room temperature an hour before cooking.
2. Peel the onions and garlic. Chop the onions into wedges and halve the garlic clove.
3. Peel and chop the carrots.
4. In a large pot, heat the butter and add the onions, garlic, and bacon. Cook until the onions are soft and the bacon is crispy.
5. Add the venison to the pot and brown it on all sides.
6. Season with black pepper, honey, soy sauce, rosemary, and sea salt.
7. Add the carrots and mix well.
8. Pour in the game stock, balsamic vinegar, and cream. Stir and let it simmer on low heat for about 1.5 hours, until the meat is tender.
9. Serve warm, accompanied by potatoes or bread.
