A delicious gluten-free onion pie that's a perfect addition to any meal or a tasty snack. With a crispy buttery crust filled with a flavorful onion mixture, it's sure to please. Preparation Time: 1 hour
Serving Size: 6-8 servings
Ingredients for the Crust:
- 75 g boiled potato - 25 g butter
- 0.5 dl soy flour
- 0.5 dl gluten-free bread mix
- 0.5 tsp salt
Filling:
- 2 medium onions - 2 tbsp oil
- 1 dl cream (or plant-based cream)
- 2 eggs
- 0.5 tsp black pepper
- 0.5 tsp salt
- 1 dl grated cheese (optional)
Instructions:
1. Prepare the crust: Mash the boiled potato in a bowl. Add the softened butter, soy flour, gluten-free bread mix, and salt. Mix until a smooth dough forms. 2. Wrap the dough in plastic wrap and let it rest in the refrigerator for about 30 minutes.
3. Peel and slice the onions. Heat the oil in a frying pan and sauté the onions over low heat until they are soft and golden brown.
4. In a bowl, combine the cream, eggs, black pepper, and salt. Add the sautéed onions and mix well.
5. Take the dough out of the refrigerator and roll it out on a piece of parchment paper into a round shape. Transfer the dough to the bottom and edges of a pie dish.
6. Pour the onion mixture over the crust and sprinkle with grated cheese if using.
7. Bake in a preheated oven at 200 °C (392 °F) for about 25-30 minutes, until the pie is beautifully golden brown.
8. Allow to cool slightly before serving.
