Cantuccinit, or Italian almond biscotti, are the perfect treat to enjoy with coffee or vin santo. These crunchy and sweet cookies make a great snack or dessert, transporting you directly to the charm of Tuscany.

Ingredients:

- 200 g almond flour
- 200 g all-purpose flour
- 150 g sugar
- 2 eggs
- 1 tsp baking powder
- 100 g whole almonds
- 1 tsp vanilla sugar
- A pinch of salt

Instructions:

1. Preheat the oven to 180°C (160°C for fan oven).
2. In a bowl, mix together almond flour, all-purpose flour, sugar, baking powder, vanilla sugar, and salt.
3. Add the eggs and mix to form a dough.
4. Stir in the whole almonds and mix well.
5. Shape the dough into two long logs and place them on a baking sheet lined with parchment paper.
6. Bake in the oven for 20-25 minutes until golden brown.
7. Remove the logs from the oven and let them cool slightly. Slice them into pieces.
8. Place the slices back in the oven and bake for another 10-15 minutes until they are crunchy.
