Traditional Russian pancakes, perfect for winter celebrations. Often served with various toppings like caviar and sour cream. Preparation Time: 1 hour
Serving Size: 4-6 people
Ingredients:
- 250 g blini flour - 500 ml milk
- 300 ml water
- 25 g yeast
- 2 eggs
- 1 tsp salt
- 1 tbsp sugar
- 50 g butter (for frying)
- Toppings: caviar, sour cream, onion, pickles, smoked salmon
Instructions:
1. Dissolve the yeast in warm milk and water. 2. Add the blini flour and mix until you have a smooth batter.
3. Stir in the eggs, salt, and sugar, and mix well.
4. Let the batter rise under a cloth for about 30 minutes.
5. Heat a frying pan and add butter.
6. Pour some batter into the pan and cook the blini for about 2-3 minutes on each side until golden brown.
7. Repeat until all the batter is used.
8. Serve the blinis with various toppings.
