A simple and quick casserole featuring delicious river prawn tails, fresh mushrooms, and cream. Perfect for a weekday dinner that takes you on a flavor journey back to casserole times. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 tbsp oil - 1 onion
- 2 cloves garlic
- 3 tbsp tomato paste
- 1-2 handfuls fresh button mushrooms
- 70 g spinach
- 1-2 dl white wine (optional)
- 5 dl lobster stock (or fish, chicken, or vegetable stock)
- 1 jar of river prawn tails in brine
- 2 dl cream
- Salt and pepper to taste
- Fresh parsley or other herbs for garnish
Instructions:
1. Peel and chop the onion and garlic. 2. Heat the oil in a pan and sauté the onions until they are soft.
3. Add the chopped mushrooms to the pan and continue to sauté for a few minutes.
4. Stir in the tomato paste and spinach, mixing well, and let the spinach wilt.
5. Pour in the white wine (if using) and lobster stock. Let it simmer for a few minutes until the sauce thickens.
6. Finally, add the river prawn tails and heat them quickly.
7. Pour in the cream and stir. Taste and season with salt and pepper as needed.
8. Serve warm, garnished with parsley or other herbs.
