Ingredients:
- 1 piece of salmon fillet
- 200 g brioche dough
- 3 tablespoons chopped dill
- 80 g crème fraîche
- 2 teaspoons honey
- A pinch of salt
- 4 tablespoons mayonnaise
- 1 teaspoon sriracha sauce
- 1 boiled egg half
- 1 avocado (sliced)
- Pickled red onion
- Fresh peas
- Salad microgreens
Instructions:
1. Smoke the salmon fillet or use pre-cooked smoked salmon.
2. Prepare the sauce by mixing together crème fraîche, honey, dill, and salt.
3. In a separate bowl, mix mayonnaise and sriracha sauce.
4. Cook two large Belgian waffles using the brioche dough.
5. Spread the dill crème fraîche sauce over the waffles.
6. Top with smoked salmon, pickled red onion, avocado slices, peas, and egg halves.
7. Finish with a drizzle of sriracha mayonnaise and garnish with salad microgreens.
