Spinach Pancakes with Smoked Salmon

Ingredients:
- 2 dl all-purpose flour
- 2 dl milk
- 3 eggs
- 200 g fresh spinach
- Salt to taste
- 1 tbsp oil for frying
- 200 g smoked salmon
- 100 g cream cheese
- Lemon juice
Instructions:
1. In a bowl, mix the flour, milk, eggs, and salt until you have a smooth batter.
2. Finely chop the fresh spinach and fold it into the batter, ensuring it’s evenly distributed.
3. Heat oil in a frying pan, pour in some batter, and cook the pancakes until they are golden brown on both sides.
4. Once cooked, fill the pancakes with smoked salmon and cream cheese.
5. If desired, drizzle some lemon juice over the filling before rolling the pancakes up tightly.
6. Serve immediately while warm.
