Delicious Tomato and Mozzarella Stuffed Pasta Rolls

A recipe for tasty pasta rolls filled with fresh tomatoes and mozzarella cheese. Perfect as an appetizer or a light main course. Preparation Time: 30 minutes

Ingredients:
- 8 pasta sheets (e.g., lasagna)
- 2 medium tomatoes
- 200 g mozzarella cheese
- 1 dl fresh basil
- 2 tbsp olive oil
- Salt and pepper to taste
- 1/2 dl grated Parmesan cheese
Instructions:
1. Cook the pasta sheets in salted water for about 5 minutes or until al dente. Drain and rinse with cold water.
2. Dice the tomatoes and mozzarella cheese into small cubes.
3. In a bowl, mix the tomatoes, mozzarella, chopped basil leaves, olive oil, salt, and pepper.
4. Lay the pasta sheets on a flat surface and evenly distribute the filling in the center of each sheet.
5. Roll the pasta sheets up and place them in a baking dish.
6. Sprinkle grated Parmesan cheese on top.
7. Bake in the oven at 180°C (350°F) for about 15 minutes, until the cheese is melted and the rolls are golden brown.
8. Serve warm.
