Katkarapu-Ceviche

A refreshing and delicious shrimp ceviche, perfect on its own, served on rye bread, or alongside new potatoes. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g cooked shrimp
- 1 lime (juiced)
- 1 lemon (juiced)
- 1 red onion (thinly sliced)
- 1 avocado (diced)
- 1 red chili (chopped)
- 2 dl fresh cilantro (chopped)
- Salt to taste
- Black pepper to taste
Instructions:
1. Start by squeezing the lime and lemon juice into a bowl.
2. Add the cooked shrimp, red onion, avocado, and chili to the juice.
3. Gently mix all the ingredients together.
4. Stir in the chopped cilantro and season with salt and black pepper.
5. Allow the ceviche to marinate in the refrigerator for about 15-20 minutes before serving.
6. Serve on its own, over rye bread, or with new potatoes.
