Shrimp Ceviche

A fresh and delicious appetizer that brings to mind the warmth of the South and Latin rhythms. Preparation time: 30 minutes
Serving size: 4 servings
Ingredients:
- 400 g fresh shrimp
- 1 dl lime juice
- 1 red onion, chopped
- 1 green chili, finely chopped
- 2 tomatoes, diced
- 1 avocado, diced
- 1/2 dl fresh cilantro, chopped
- Salt and black pepper to taste
- 1/4 dl olive oil
Instructions:
1. Boil the shrimp in salted water for about 3-5 minutes until they turn pink. Drain and cool.
2. In a bowl, mix lime juice, red onion, chili, tomatoes, avocado, and cilantro.
3. Add the cooled shrimp to the mixture and season with salt, pepper, and olive oil.
4. Allow the ceviche to marinate in the refrigerator for about 15-20 minutes before serving.
5. Serve cold with nachos or bread.
