A refreshing and zesty shrimp ceviche salad that's perfect for a light meal or appetizer. Preparation Time: 25 minutes
Serving Size: 4 servings
Ingredients:
- 300 g peeled shrimp
- 1 lime (juice)
- 1 large tomato (diced)
- 1 avocado (diced)
- 1/2 red onion (finely chopped)
- 1/2 cucumber (diced)
- Fresh cilantro (chopped)
- Salt to taste
- Pepper to taste
- Olive oil
Instructions:
1. Boil the shrimp in salted water for a few minutes until cooked, then drain and let cool.
2. Squeeze lime juice into a bowl and add the finely chopped red onion. Let it marinate for about 10 minutes.
3. Add the cooled shrimp, diced tomato, avocado, and cucumber to the bowl. Gently mix together.
4. Stir in the chopped cilantro, salt, pepper, and olive oil. Combine all ingredients well.
5. Serve immediately on a bed of salad greens or with tortilla chips.
