A delicious and refreshing South American fish dish that comes together quickly with citrus. Perfect as a starter served with avocado mayonnaise.

Ingredients:

- 400 g fresh white fish (such as cod or sea bream)
- 100 ml lime juice
- 100 ml lemon juice
- 1 red onion, thinly sliced
- 1 chili, finely chopped (such as jalapeño)
- 1 tomato, diced
- 50 ml fresh cilantro, chopped
- Salt to taste
- Black pepper to taste
Avocado Mayonnaise:
- 1 ripe avocado
- 1 tbsp lemon juice
- 50 ml mayonnaise
- Salt and pepper to taste

Instructions:

1. Cut the fish into small cubes and place in a bowl.
2. Pour the lime juice and lemon juice over the fish. Add salt and pepper. Mix well.
3. Add the sliced red onion, chopped chili, and diced tomato. Gently mix.
4. Let the fish marinate in the refrigerator for about 15-20 minutes until it changes color.
5. Prepare the avocado mayonnaise: Blend the avocado, lemon juice, mayonnaise, salt, and pepper in a bowl until smooth.
6. Serve the ceviche with the avocado mayonnaise and garnish with fresh cilantro.
