A traditional bread that brings the festive spirit of Christmas, this flavorful loaf is perfect for the holiday table or enjoyed with mulled wine. Preparation time is about 3 hours. Serves 10.

Ingredients:

- 500 g rye flour
- 250 g wheat flour
- 1 dl syrup
- 1 dl water
- 2 dl milk
- 25 g yeast
- 1 tbsp salt
- 2 tbsp crushed juniper berries
- 1 tbsp fennel seeds
- 1 tbsp anise seeds
- 1 tbsp cinnamon

Instructions:

1. Warm the milk and water to body temperature. Add the yeast and stir until dissolved.
2. In a large bowl, mix the rye and wheat flours. Add the salt, syrup, crushed juniper berries, fennel seeds, anise seeds, and cinnamon.
3. Pour the yeast mixture into the flour mixture and knead the dough until smooth and elastic.
4. Cover the dough with a cloth and let it rise in a warm place for about 1-2 hours, until it has doubled in size.
5. Knead the dough again and shape it into a loaf. Place it on a baking sheet lined with parchment paper.
6. Allow the loaf to rise for another 30 minutes.
7. Bake the loaf at 200°C (400°F) for about 30-40 minutes, until it is golden brown and cooked through.
