Vegetable Pie (Kasvispiirakka)

A delicious and hearty vegetable pie, perfect for a light meal or as a side dish. Preparation Time: 15 minutes
Cooking Time: 40 minutes
Serving Size: 6 servings
Ingredients:
- 1 dl cream
- 1 pack of vegetable or root vegetable strips
- 2-3 cloves of garlic, crushed or dried
- 1 pack of frozen pie crust
- 1 pack of tomato salsa (e.g., Apetit)
- 2 eggs
- Chopped fresh parsley or dried parsley to taste
- 1 can of sour cream
- 1 small leek, sliced
Instructions:
1. Preheat the oven to 200°C (392°F).
2. Roll out or spread the frozen pie crust into a pie dish.
3. In a bowl, mix together the cream, vegetable strips, crushed garlic, tomato salsa, eggs, parsley, sour cream, and sliced leek.
4. Pour the mixture evenly over the pie crust.
5. Bake the pie in the oven for about 30-40 minutes, until the top is beautifully golden brown.
6. Allow to cool for a moment before serving. Enjoy!
