A delicious smoked salmon and vegetable pie, perfect for lunch or dinner. Preparation Time: 15 minutes
Cooking Time: 40 minutes
Serving Size: 6 servings
Ingredients:
- 2 dl rye flakes - 1 tsp dried thyme
- Splash of soy sauce
- 2 dl bread flour
- 3 eggs
- ½ tsp dried savory
- 8 dl rice cooked in spiced water
- ½ tsp salt
- 1 tsp dried rosemary
- 3 dl lactose-free milk
- 2 dl water
- 2½ dl yeast bread flour
- 200 g mixed peas, corn, and bell pepper
- 1 tsp baking powder
Instructions:
1. Preheat the oven to 200°C (392°F). 2. In a bowl, mix the rye flakes, thyme, bread flour, eggs, and savory. Add a splash of soy sauce and stir until a smooth dough forms.
3. Spread the dough into a pie dish, pressing it onto the sides.
4. Cook the rice in spiced water, then mix in the salt, rosemary, milk, and water.
5. Stir in the yeast bread flour and baking powder into the rice mixture, blending well.
6. Finally, add the mixed peas, corn, and bell pepper, and stir until evenly combined.
7. Pour the rice and vegetable mixture over the pie crust.
8. Bake in the oven for about 30-40 minutes, or until the top is a beautiful golden brown.
9. Allow to cool slightly before serving. Enjoy!
