A delicious vegetable pie filled with fresh ingredients. Perfect as a light meal or snack.

Ingredients
Crust:
- 100 g butter
- 2 1/2 dl all-purpose flour
- 1 egg
Filling:
- 1 bell pepper
- 1/2 zucchini
- 1/2 leek
- 10 green olives
Instructions
1. Melt the butter and let it cool.
2. In a bowl, mix the all-purpose flour and cooled butter. Add the egg and stir until a smooth dough forms.
3. Press the dough into the bottom and up the sides of a pie dish.
4. Chop the bell pepper, zucchini, and leek into small pieces.
5. Sauté the vegetables in a pan with a little oil for about 5 minutes until slightly tender.
6. Add the olives to the vegetable mixture and stir well.
7. Pour the vegetable mixture over the pie crust.
8. Bake in a preheated oven at 200°C (about 400°F) for 25-30 minutes, or until the top is golden brown.
9. Allow to cool for a moment before serving.
10. Enjoy warm or cold!
