A delightful recipe to enjoy fresh seasonal vegetables grilled to perfection. Preparation Time: 30 minutes

Ingredients:
- 1 zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 200 g cherry tomatoes
- 100 g fresh herbs (such as basil, thyme)
- 3 tbsp olive oil
- Salt and pepper to taste
- 1 tbsp balsamic vinegar (optional)
Instructions:
1. Rinse and chop all the vegetables into bite-sized pieces.
2. Place the vegetables in a bowl and add olive oil, salt, pepper, and balsamic vinegar. Mix well.
3. Preheat the grill to medium heat.
4. Place the vegetables on the grill and cook for about 10-15 minutes, until they are tender and have nice grill marks.
5. Top the grilled vegetables with fresh herbs before serving.
6. Serve warm as a side dish to grilled meat or fish.
