Ingredients

- 1 large zucchini
- 3 onions
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 2 cloves garlic
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil (optional)

Instructions

1. Rinse the zucchini and cut it in half lengthwise. Scoop out the insides and cut it into strips.
2. Peel and chop the onions and garlic cloves.
3. Rinse the bell peppers, remove the seeds, and cut them into cubes.
4. Heat olive oil in a large skillet over medium heat. Add the onions and garlic, and sauté for about 3-4 minutes.
5. Add the bell peppers and continue to cook for a few minutes until they soften.
6. Add the zucchini strips and cook for another 5-7 minutes until they are tender but still crisp.
7. Season with salt and pepper. You can add fresh basil if desired.
8. Serve immediately while warm.
