Vegetable Puree Soup (Kasvis-Sosekeitto)

A delicious and creamy vegetable soup, perfect for a cozy meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1.5 liters of water
- 2 large carrots
- 5 large potatoes
- 0.25 dl dried mushrooms
- 0.25 dl dried onion soup mix
- Salt to taste
- Black pepper to taste
- A splash of olive oil
Instructions:
1. Peel and dice the carrots and potatoes into small cubes.
2. Bring the water to a boil in a large pot.
3. Add the diced carrots, potatoes, dried mushrooms, and onion soup mix to the pot.
4. Cook the vegetables for about 20-25 minutes, until they are soft.
5. Remove the pot from heat and blend the soup using an immersion blender or a regular blender until smooth.
6. Season the soup with salt and black pepper to taste. Drizzle in a splash of olive oil.
7. Serve hot and enjoy!
