A rich and comforting Finnish soup made with a blend of root vegetables and beef broth. Perfect for a cozy meal. Preparation Time: 45 minutes
Serving Size: 4 servings
Ingredients:
- 2 liters of good beef broth
- 1-2 carrots
- 1 parsnip
- 1/2 celery root
- 30 g butter
- 50 g wheat flour
- Salt to taste
- White pepper to taste
- Paprika to taste
Instructions:
1. Peel and chop the carrots, parsnip, and celery root.
2. Heat the butter in a large pot and add the chopped vegetables. Sauté for a few minutes until they soften.
3. Stir in the wheat flour and cook for a moment.
4. Pour the beef broth into the pot and mix well. Let the soup simmer on low heat for about 30 minutes, until the vegetables are tender.
5. Blend the soup using an immersion blender or a regular blender until smooth.
6. Season with salt, white pepper, and paprika according to your taste.
7. Serve hot and enjoy!
