Ingredients:
- 4 medium carrots - 1 onion
- 2 garlic cloves
- 600 ml vegetable broth
- 100 ml cream (or plant-based cream)
- 100 ml fresh wild herbs (e.g., nettles, dandelion leaves, or spruce shoots)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Peel and chop the carrots and onion. Mince the garlic.2. Heat the olive oil in a pot and sauté the onion and garlic for a few minutes until fragrant.
3. Add the chopped carrots and continue to sauté for another few minutes.
4. Pour in the vegetable broth and simmer until the carrots are tender, about 15-20 minutes.
5. Blend the soup with an immersion blender or in a regular blender until smooth.
6. Stir in the cream and finely chopped wild herbs. Heat the soup gently but do not boil.
7. Season with salt and pepper to taste. Serve warm.
