A delicious fish soup inspired by Restaurant Kaskiksen, bringing the flavors of the sea to your plate. Perfect for a warm meal!
Preparation Time: 45 minutes
Serving Size: 4 servings
Ingredients:
- 400 g fresh fish (e.g., salmon or cod)
- 1 liter fish stock
- 2 potatoes
- 2 carrots
- 1 onion
- 2 garlic cloves
- 200 ml cream
- 1 dl fresh dill
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 lemon
Instructions:
1. Peel and dice the potatoes and carrots into small cubes.
2. Peel and finely chop the onion and garlic.
3. Heat olive oil in a large pot and sauté the onion and garlic for a few minutes.
4. Add the diced potatoes and carrots to the pot and cook for a few more minutes.
5. Pour the fish stock into the pot and bring to a boil. Reduce the heat and simmer for about 15 minutes until the vegetables are tender.
6. Cut the fish into bite-sized pieces and add it to the soup. Let it cook for another 5-10 minutes.
7. Stir in the cream and chopped dill. Season with salt and pepper.
8. Serve the soup with lemon wedges on the side.
