A flavorful and hearty fish soup with a kick of cayenne pepper.

Ingredients:
- 4 shallots
- 2 large yellow onions
- 2-3 carrots
- A few splashes of olive oil
- 300 g eggplant or zucchini
- 1-1.5 liters fish stock
- Cayenne pepper to taste
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or dill) for garnish
Instructions:
1. Peel and chop the shallots, yellow onions, and carrots.
2. Heat olive oil in a large pot over medium heat and sauté the onions until soft.
3. Add the chopped carrots and continue cooking for a few more minutes.
4. Cut the eggplant or zucchini into cubes and add them to the pot. Sauté for a few additional minutes.
5. Pour the fish stock into the pot and bring it to a boil.
6. Reduce the heat and let the soup simmer gently for about 20-30 minutes.
7. Season the soup with cayenne pepper, salt, and pepper to taste.
8. Serve the soup garnished with fresh herbs.
