This delicious and rich mushroom soup is the perfect starter or light main dish. It's easy to prepare and packed with flavor.

Serving Size: 4 servings

Ingredients:

- 500 g fresh mushrooms
- 1 onion
- 2 garlic cloves
- 400 ml vegetable broth
- 200 ml cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:

1. Peel and finely chop the onion and garlic.
2. Clean and slice the mushrooms.
3. Heat olive oil in a pot over medium heat. Add the onion and garlic, sautéing for about 5 minutes until soft.
4. Add the sliced mushrooms to the pot and cook for about 10 minutes until they are golden brown.
5. Pour in the vegetable broth and let the soup simmer for about 10 minutes.
6. Blend the soup with an immersion blender until smooth.
7. Stir in the cream and heat the soup again, but do not bring it to a boil. Season with salt and pepper.
8. Serve the soup hot, garnished with fresh parsley.
