Ingredients:
- 1 kg lamb roast
- 30 g dried mushrooms
- 2 dl water (for soaking)
- 2 tablespoons olive oil
- 2 garlic cloves, crushed
- 1 onion, chopped
- 2 dl beef broth
- Salt to taste
- Pepper to taste
- Fresh herbs (e.g., rosemary or thyme)
Instructions:
1. Soak the dried mushrooms in warm water for 1 hour.
2. Take the lamb roast out and let it come to room temperature for about 30 minutes before cooking.
3. Heat olive oil in a large skillet over medium heat.
4. Add the chopped onion and crushed garlic, and sauté for a few minutes until soft.
5. Add the lamb roast to the skillet and brown it on both sides.
6. Add the soaked mushrooms and beef broth, then season with salt and pepper.
7. Let the dish simmer on low heat for about 60 minutes, or until the meat is tender.
8. Serve with fresh herbs on top.
