A delightful pasta dish combining chanterelle mushrooms and cream, perfect for a weeknight dinner or special occasions. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g chanterelle mushrooms
- 1 red onion
- 250 ml cooking cream (plant-based mix)
- 3/4 tsp salt
- 1/2 tsp sugar
- 1/4 tsp black pepper
- 300 g tagliatelle pasta
- 2 tbsp olive oil
- Fresh parsley (for garnish)
Instructions:
1. Cook the tagliatelle pasta according to package instructions until al dente. Drain and reserve a bit of the cooking water.
2. Peel and chop the red onion.
3. Heat olive oil in a large skillet over medium heat. Add the chopped red onion and sauté for about 5 minutes until soft.
4. Add the chanterelle mushrooms to the skillet and cook until golden brown and the moisture has evaporated.
5. Pour in the cooking cream and mix well. Add salt, sugar, and black pepper. Let the sauce simmer on low heat for about 5 minutes.
6. Combine the drained tagliatelle with the sauce and mix thoroughly. If needed, add a bit of reserved cooking water to achieve the desired consistency.
7. Serve the pasta garnished with fresh parsley.
