Ingredients:
- 200 g pasta (e.g., spaghetti or fettuccine)
- 100 g pancetta or bacon
- 2 eggs
- 50 g Parmesan cheese (grated)
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted boiling water according to the package instructions until al dente.
2. While the pasta cooks, fry the pancetta or bacon in a skillet over medium heat until crispy.
3. In a bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper until well combined.
4. Drain the cooked pasta, reserving a little pasta water.
5. Add the hot pasta to the skillet with the pancetta and mix well.
6. Remove the skillet from heat and pour the egg mixture over the pasta. Stir quickly to cook the eggs lightly with the residual heat of the pasta.
7. If the mixture seems too thick, add a little reserved pasta water to loosen it up.
8. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
