Serving Size: 6-8 servings
Ingredients:
- 250 g chanterelle mushrooms
- 2 medium potatoes
- 200 g cheese (such as Emmental or feta)
- 1 onion
- 200 ml cream
- 3 eggs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 pre-made pie crust
Instructions:
1. Peel and boil the potatoes until tender. Let them cool and slice.
2. Sauté the chopped onion in oil in a pan until soft.
3. Add the chanterelle mushrooms to the pan and cook until the liquid has evaporated.
4. In a bowl, mix together the cream, eggs, salt, black pepper, and thyme.
5. Place the pre-made pie crust in a baking dish. Arrange the potato slices on the bottom.
6. Add the mushroom mixture on top of the potatoes and crumble the cheese over them.
7. Pour the cream and egg mixture over the pie.
8. Bake at 200 °C (390 °F) for about 30-35 minutes, until the top is beautifully golden brown.
9. Allow to cool slightly before serving.
