A delicious and rich pie that highlights the flavor of chanterelle mushrooms. This recipe is cheese-free, allowing the mushrooms to take center stage.

Ingredients

Crust:
- 125 g butter/margarine
- 3 dl Semper fine flour mix
- 125 g quark
- 50 g grated cheese
Filling:
- 1 liter chanterelle mushrooms
- 1 large onion
- 2 dl cream
- 50 g sour cream
- 2 eggs
- salt and black pepper

Instructions

1. In a bowl, mix the butter and flour until crumbly. Add the quark and grated cheese, and mix until a smooth dough forms.
2. Let the dough chill in the refrigerator for a short while.
3. Press the dough into the bottom and sides of a pie dish (28-30 cm in diameter) using some flour to prevent sticking.
4. Sauté the onions and chanterelles in a pan until soft, then allow to cool.
5. In a separate bowl, whisk the eggs and mix in the cream, sour cream, and seasonings.
6. Evenly spread the chanterelle mixture over the pie crust and pour the egg mixture on top.
7. Bake at 200°C (392°F) for about 30-40 minutes, or until the pie is beautifully golden brown.
