Kantarellipiirakka with Svedjan Gårdost Cheese

A delicious chanterelle pie combining savory mushrooms and rich cheese, perfect for lunch or serving at gatherings. Preparation Time: 1 hour
Serving Size: 4-6
Ingredients:
- 50 g butter
- 0.8 dl all-purpose flour
- 0.3 dl rye flour
- A pinch of salt
- Over 200 g chanterelles
- A bit of butter for frying
- 1 onion
- A few grinds of black pepper
- 100 g Svedjan Gårdost cheese
- 2 eggs
- 2 dl cream
Instructions:
1. Start by making the dough. Combine butter, all-purpose flour, rye flour, and salt in a bowl.
2. Press the dough into a small (15 cm diameter) springform pan, covering the bottom and sides.
3. Prick the dough with a fork and bake at 200°C (392°F) for 10 minutes.
4. Meanwhile, sauté the chanterelles in a pan until the moisture evaporates. Add a little butter and chopped onion, season with black pepper, and sauté until the onion is soft.
5. Spread the sautéed mushrooms over the pre-baked crust.
6. Grate the Svedjan Gårdost cheese and sprinkle it over the mushrooms.
7. Whisk together the eggs and cream, then pour the mixture over the pie.
8. Bake the pie for another 25 minutes until golden brown.
9. Serve warm with a side salad.
