Chanterelle and Lingonberry Bulgur

A delightful dish showcasing the flavors of autumn with fresh chanterelles and tangy lingonberries, perfect as a side or main course. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 tbsp butter
- 1.5 dl bulgur (cooked according to package instructions)
- 0.25 tsp black pepper
- 1.5 dl fresh lingonberries
- 1 kg fresh chanterelles
- 0.5 tsp salt
- 3 shallots
- 250 g cottage cheese (9-14% fat)
- 2 dl fresh parsley, finely chopped
Instructions:
1. Clean and chop the chanterelles.
2. Peel and finely chop the shallots.
3. Heat the butter in a pan and add the shallots. Sauté for about 2-3 minutes.
4. Add the chanterelles to the pan and cook until they are tender and the liquid has evaporated.
5. Season the mixture with salt and black pepper.
6. In a bowl, combine the cooked bulgur, lingonberries, and the chanterelle mixture.
7. Finally, add the cottage cheese and chopped parsley. Mix well.
8. Serve warm.
