Ingredients:
- 12 oz (340g) pasta (penne or fettuccine)
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 16 oz (450g) mushrooms, sliced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
3. Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are browned and tender, about 7-10 minutes.
4. Lower the heat and stir in the heavy cream. Allow to simmer for 5 minutes, stirring occasionally.
5. Mix in the grated Parmesan cheese, and season with salt and pepper. Stir until the cheese is melted and the sauce is creamy.
6. Add the cooked pasta to the skillet and toss to combine, ensuring the pasta is well coated with the sauce.
7. Serve hot, garnished with fresh parsley.
