Ingredients:
- 400 g fresh mushrooms
- 1 onion
- 2 garlic cloves
- 3 tablespoons butter
- 1 liter vegetable broth
- 200 ml cooking cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Clean and slice the mushrooms. Peel and chop the onion and garlic.
2. Heat the butter in a large pot. Add the onion and garlic, sautéing on low heat for about 5 minutes.
3. Add the sliced mushrooms to the pot and cook until they are soft and the liquid has evaporated, about 5-7 minutes.
4. Pour the vegetable broth into the pot and let the soup simmer on low heat for about 15 minutes.
5. Blend the soup with an immersion blender or in a regular blender until completely smooth.
6. Stir in the cooking cream and mix well. Season with salt and pepper.
7. Heat the soup again, but do not let it boil. Serve with fresh parsley on top.
