Chicken Nuggets with Mashed Potatoes

Delicious and easy weeknight meal, perfect for a delightful treat on Shrove Tuesday. Preparation Time: 45 minutes
Serving Size: 4 servings
Ingredients:
- 400 g chicken breast cubes
- 1 dl breadcrumbs
- 1 dl flour
- 1 dl milk
- 1 egg
- Salt and pepper to taste
- 800 g potatoes
- 50 g butter
- 1 dl milk for the mash
- Parsley for garnish (optional)
Instructions:
1. Peel and chop the potatoes. Boil them in salted water for about 20 minutes until soft.
2. Meanwhile, prepare the chicken nuggets.
3. In a large bowl, mix the breadcrumbs and flour.
4. Crack the egg into the bowl and add the milk. Whisk well.
5. Add the chicken cubes to the bowl and mix to coat them in the batter. Season with salt and pepper.
6. Preheat the oven to 200°C (392°F).
7. Take the chicken cubes out of the batter and roll them in breadcrumbs.
8. Place the nuggets on a baking tray lined with parchment paper and bake for about 20-25 minutes until golden brown.
9. Prepare the mash: Drain the boiled potatoes and mash them. Add butter and milk, mixing until smooth.
10. Serve the chicken nuggets with the mashed potatoes. Garnish with parsley if desired.
