Spicy Chicken Soup

A delicious and spicy chicken soup made from a whole chicken. Perfect for warming up on cold days.
Preparation Time: 3-4 hours
Serving Size: 4-6 servings

Ingredients:

- 1 whole chicken
- 1 large carrot, chopped
- ½ root celery, diced
- 2 shallots, sliced
- 3 garlic cloves, crushed
- 1 tablespoon salt
- 8 black peppercorns
- Yellow bell pepper, sliced
- Green bell pepper, sliced
- 1 teaspoon curry powder
- ½ red chili, chopped
- 1-2 dl skim milk

Instructions:

1. Bring a pot of water to a boil and add the spices and the whole chicken. The water should just cover the chicken.
2. Simmer the chicken gently for 2-3 hours with the lid on, until the meat almost falls off the bones. Strain the broth.
3. Remove the chicken meat from the bones and cut it into small pieces.
4. Slice the bell peppers and sauté them in oil in a pan until slightly browned.
5. Return the strained broth to the pot and add the chopped carrot and diced celery. Cook for 10-15 minutes.
6. Season with curry powder. Add the chicken, bell peppers, and chopped chili.
7. Pour in 1-2 dl of skim milk and bring to a boil. Adjust the seasoning to taste.
